  • 2 large onions, chopped
  • 2 (275g) bottles honey barbecue sauce
  • 4 (420g) tins baked beans and sausages, sausages cut up into small pieces
  • 1 (400g) tin kidney beans, rinsed and drained
  • 1 (400g) tin butter beans, rinsed and drained
  • 1 (400g) tin black beans, rinsed and drained
  • 110g dark brown soft sugar
  • 3 tablespoons cider vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

  1. Preheat oven to 180 C / Gas 4.
  2. Place the bacon in a large, deep frying pan and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a kitchen towel-lined plate. Let cool and crumble.
  3. Place the minced beef and onions into a large frying pan over medium heat and cook and stir until the meat is no longer pink, breaking the meat apart as it cooks, about 10 minutes. Drain any excess fat. Transfer the beef and onion mixture into a large casserole dish. Stir in the crumbled bacon, honey barbecue sauce, sausages and beans, kidney beans, butter beans, black beans, dark brown soft sugar, cider vinegar, salt and pepper.
  4. Cover and bake in the preheated oven until bubbling, about 1 hour.

OK, I know I'm not supposed to review if I changed the recipe, but these were THE MOST amazing beans I have had outside of an authentic BBQ restaurant. First of all, the only things that I changed were 1) I omitted the meat because I wanted a vegetarian-friendly side dish, and 2) I just dumped everything in the slow cooker and let it cook on low for a few hours. AMAZING!!! I will be making these beans often because EVERYONE raved about them. Thanks for the fabulous recipe!-09 Jan 2011

  • Freshly ground black pepper (to taste)

Despite all this, I’m one of those weirdos that still almost always serves my baked beans from a can. I mean, if it’s worked this long, why rock the boat? Right? I know I’m notorious for shaking things up, but this is one dish I do not have a tried and true recipe for.

When my best friend kept touting her baked bean recipe, I was skeptical. When she brought a baked bean based chili to our cookout, I didn’t even know what to think. I mean beans are essential to any good chili recipe. They’re the basis for the magic that’s gonna happen. But baked beans? I just couldn’t picture it, or taste it.

Even using canned beans, there was always one element that had to be added. Bacon. Yes that’s right. Bacon is always right. Bacon unarguably makes everything better. So, we’ve got bacon & baked beans. A solid side dish on their own, but with the potential to be an amazing. Just given a little love and attention!

This chili starts the same way any other traditional chili begins… with a bit of ground beef, cooked and crumbled in a stew pot. Except with this one, we’re going to add in bacon and diced white onion. That mixture is stirred, broken up, and stirred some more until it’s all cooked through. Drain the meat mixture of any fat.

Transfer the meat mixture to a large soup pot, then add in all the remaining seasonings & ingredients. Bring the pot to a boil. Reduce the heat to simmer, and stirring occasionally, simmer the chili for 2-3 hours. We prefer an really thick chili, but if you enjoy yours on the thinner side- add a bit of beef broth until the desired consistency is reached.

There’s no more love that could’ve been given, than with this Ground Beef & Bacon Baked Bean Chili. It’s like Grandma had a hand in game day grub. So good!


Four Layer Beef and Bacon Casserole

Preheat the oven to 375 degrees F. Grease a 9-by-13-inch (23-by-33-cm) baking dish.

Place the bacon on a rimmed baking sheet, place in the oven and bake for 12 to 15 minutes, until cooked through. Roughly chop the bacon. Set aside.

Turn up the oven to 400 degrees F. Poke holes in sweet potato with a fork. Place on a rimmed baking sheet and bake for 35 to 40 minutes or until the sweet potatoes are soft and easily pieced through with a knife. The time may range depending on the thickness of the sweet potatoes.

While the potatoes are baking, steam the cauliflower. Once cauliflower is fork tender, place it in a food processor or blender and puree until cauliflower becomes soft and resembles mashed potatoes. Then add the coconut milk and salt and pepper and continue to blend until you have a smooth consistency. Remove from the blender and set aside. Clean out the blender for the sweet potato mash.

When sweet potatoes are soft, remove their skins and place in the food processor or blender. Blend until the sweet potato breaks down, then add the coconut milk, sage, and salt and pepper and puree until smooth. Set aside for later.

Lastly, place a large pan or Dutch oven over medium-high heat. Add the ground beef and break it apart with a wooden spoon. Once the meat begins to brown, add the garlic, yellow onion and button mushrooms. Sprinkle with salt and pepper and continue to cook until the meat is cooked through, then remove the pan from heat.

Create the layers: Use a slotted spoon to remove half of the meat mixture from the excess liquid in the pan and place in the prepared baking dish in one layer. Then pour the cauliflower mash mixture on top of the meat and spread out. Then, using the slotted spoon, add the other half of the meat on top of the cauliflower mash. Lastly, pour the sweet potato mash on top and spread it out on top of the meat.

Turn oven down to 350 degrees F. Place the casserole in the oven and bake for 30 minutes, or until the casserole begins to bubble. Then turn on the broiler to high and cook for 5 minutes to brown the top of the casserole. Let rest to thicken and garnish with the bacon before serving.

  • 2 cans (10 1/2 ounces) Campbell’s® Condensed Cream of Mushroom Soup or 98% Fat Free Cream of Mushroom Soup
  • 1 cup milk
  • 1/2 cup shredded Cheddar cheese
  • 6 slices bacon, cooked and chopped (about 6 tablespoons)
  • 1/4 teaspoon ground black pepper
  • 8 cups cooked green beans orل cans (14.5 ounces each) any style Del Monte® Green Beans, drained
  • 2 2/3 cups French's® French Fried Onions

Stir the soup, milk, half the cheese, 5 tablespoons bacon, black pepper, beans and 1 1/3 cups onions in a 3-quart baking dish.

Bake at 350°F. for 25 minutes or until the bean mixture is hot and bubbling and the beans are tender (for softer beans bake a little longer).  Stir the bean mixture.  Sprinkle with the remaining cheese, onions and bacon.

I stumbled upon a Southwest Black Bean Casserole at Pinch of Yum while searching for a black soy beans recipe. I have been following Lindsay and Bjork at Pinch of Yum off and on for a few months.

The information that Lindsay and Bjork provide to food bloggers has really helped me improve this blog since I returned to blogging in October 2014. So, a big thank you to Pinch of Yum and all they do for us food bloggers! And, thanks for the inspiring this tasty Southwest Casserole with Ground Beef and beans.

So much has changed since I stopped blogging in January 2013. Although Pinterest launched in March 2010, the same year I started this blog, I had never heard of it.

I discovered Pinterest last October when I was looking at the stats for this blog and saw that a lot of the traffic was coming from Pinterest. It was amazing how many people pinned posts from this food blog while I was away.

The food blogging community has become much larger today than I could have ever imagined. I was one of the few low carb bloggers back in 2010 and now things have kind of exploded.

I made a lot of mistakes in the beginning of the blog and I&rsquom still working on cleaning up those issues as I have time.

This low carb Southwest casserole recipe with ground beef and beans uses a can of low carb black soy beans. Regular black beans have way too many carbs.

My local grocery store used to sell these in the natural food section. But now it&rsquos on the shelf with all the other beans after they redesigned the layout of the store. They ended up eliminating the aisles that used to be specific to natural food items.

It took me a while to figure out where the black soy beans were after they relocated things. As you can see from the label, the carbs in these black soy beans are almost all fiber so a ½ cup serving has only 1 net carb.

I don&rsquot eat soy very often because it may interfere with the thyroid medication that I take. However, it&rsquos suggested that this isn&rsquot the case as long as you wait at least four hours after taking thyroid medication before consuming any soy.

The original black bean casserole recipe calls for only a half a pound of meat and it used ground turkey. I&rsquom not a fan of ground turkey and a half pound is certainly not enough meat for 6 servings. So I doubled the meat and used only half the amount of beans for my Southwest casserole with ground beef and beans.

I actually used a little over a pound of ground venison meat which tastes more like beef, but is very lean so fat is added when it&rsquos processed. I think a red meat tastes better in this dish. You can use whatever ground meat you prefer.

I&rsquove found that soy beans take a little longer to cook than black beans and they don&rsquot mash as well. I cooked the beans a little longer than five minutes and it took a bit to mash them up.

Once the beans are mashed, the soy bean mixture is layered at the bottom of a 8×8-inch or 2 quart casserole dish. The browned meat mix is then layered over the beans.

I didn&rsquot have any fresh tomatoes, so I used a 14 ounce can and drained the liquid off. It also saved me the time of cutting and seeding the tomatoes.

The original recipe also didn&rsquot use enough cheese. I&rsquom a cheese lover so more is always better. I added some grated cheddar as well to the grated Monterey jack cheese.

For me, the Southwest beef and bean casserole was done in a little over 20 minutes. This is a yummy Southwest beef and bean casserole recipe that isn&rsquot too spicy. I may up the heat next time as I like hot Southwest food. It&rsquos delicious served with sour cream mixed in.
